Ingredients
2 cups cooked jasmine rice (cold, day-old rice works best for texture)
1 cup fresh pineapple chunks (or canned, drained)
1 onion, diced
2 cloves garlic, minced
1 cup mixed vegetables (like peas and carrots, frozen or fresh)
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon vegetable oil
2 green onions, sliced
Salt and pepper to taste
Optional protein: grilled chicken, shrimp, or tofu (cooked, as desired)
Instructions
Prepare the Rice: If using fresh rice, allow it to cool completely or use pre-cooked, day-old rice for the best texture.
Sauté Aromatics: Heat the vegetable oil over medium heat. Add the diced onion and cook for about 2-3 minutes until softened, then add garlic and sauté for 30 seconds.
Add Vegetables and Pineapple: Stir in mixed vegetables and pineapple chunks, cooking for another 3-4 minutes.
Incorporate Rice: Add cold cooked jasmine rice to the skillet, breaking up clumps, and cook for about 5 minutes.
Season the Dish: Pour in soy sauce and oyster sauce (if using), mixing well to distribute. Cook for another 2-3 minutes until hot.
Serve: Garnish with sliced green onions before serving hot.
Notes
Use day-old rice for the best texture and avoid overcooking vegetables for a vibrant dish.
