A vibrant and healthy side dish combining classic Caprese flavors with roasted asparagus, perfect for any meal.

Ingredients

  • 1 lb asparagus, trimmed
  • 2 cups cherry tomatoes, halved
  • 2 cups shredded mozzarella cheese
  • Olive oil, for drizzling
  • Kosher salt and pepper, to taste
  • Fresh chopped basil, for garnish
  • Bottled balsamic glaze, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). This high temperature helps the vegetables roast quickly while developing flavor.
  2. Line a baking sheet with foil for easy cleanup. Lightly spray it with non-stick cooking spray to prevent sticking.
  3. Place the asparagus on one side of the baking sheet in a single row, ensuring they are not overcrowded. On the other side, arrange the halved cherry tomatoes.
  4. Drizzle the asparagus with 1 tablespoon of olive oil, then sprinkle generously with salt and pepper. Repeat the drizzling and seasoning with the cherry tomatoes.
  5. Place the baking sheet in the preheated oven and roast for 10 minutes. The asparagus should be tender yet crisp, and the tomatoes should begin to soften.
  6. Remove the baking sheet and sprinkle the shredded mozzarella cheese over the asparagus with 5 minutes remaining. Return the baking sheet to the oven and continue to cook until the cheese is melted and lightly golden, about 5 more minutes.
  7. Carefully remove the baking sheet from the oven. Transfer the roasted asparagus to a serving plate, top with roasted tomatoes, and garnish with fresh basil. Drizzle with balsamic glaze before serving.

Notes

Trim the asparagus so they are tender without being woody. You can substitute mozzarella with goat cheese for a tangy twist. Adjust cherry tomatoes based on your preference.
