Ingredients

  • 2 ½ cups powdered sugar (sifted)
  • ¾ cup unsweetened cocoa powder (Dutch-processed or natural)
  • 3 large egg whites (room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet or dark chocolate chips
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Whisk together the powdered sugar, cocoa powder, and a pinch of salt until fully combined.
  3. Add the egg whites and vanilla extract to the dry mixture. Stir until the batter is thick and glossy.
  4. Fold in the chocolate chips using a rubber spatula, ensuring they are evenly distributed.
  5. Scoop the dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  6. Bake in the preheated oven for 10-12 minutes, until shiny with slightly cracked tops.
  7. Cool the cookies on the baking sheet for 3 minutes before transferring to a wire rack.

Notes

Ensure egg whites are at room temperature for better texture. Don’t overbake the cookies.
