A satisfying and wholesome meal that combines protein, vegetables, and carbs in one delicious bowl.

Ingredients

  • 500 g ground beef
  • 3 slices of cheddar cheese
  • 3 heads of romaine lettuce
  • 3 large tomatoes
  • 3 large pickles
  • 750 g potatoes (waxy variety)
  • 4 tablespoons low-fat mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon mustard
  • 2-3 tablespoons pickle juice
  • Salt and pepper to taste
  • Optional: Sesame seeds for topping

Instructions

  1. Peel and dice the potatoes into cubes. Coat them with oil spray, salt, pepper, and sweet paprika. If you’re using an air fryer, cook at 220°C (428°F) for about 15 minutes, shaking the basket halfway through. Alternatively, bake in a preheated oven at 220°C (428°F) for 25-30 minutes until golden and tender.
  2. While the potatoes are cooking, slice the romaine lettuce into thin strips. Cut the tomatoes and pickles into slices.
  3. Heat some oil in a pan over medium heat. Add the ground beef and cook it until it’s browned and crumbly. Season with salt, pepper, and paprika to enhance the flavor.
  4. Place the cheese slices on top of the cooked meat and cover the pan. Allow the cheese to melt for a minute or two, creating a delicious cheesy topping for your bowl.
  5. In serving bowls, layer the ingredients starting with the romaine lettuce, followed by the tomato slices, pickles, and potato cubes. Top with the cheesy ground beef.
  6. In a small bowl, whisk together the mayonnaise, ketchup, mustard, and pickle juice. Drizzle this sauce generously over the assembled bowls. For an optional touch, sprinkle some sesame seeds on top.
