A delightful combination of creamy, cheesy goodness paired with crunchy tortilla chips, perfect for any gathering or festive occasion.

Ingredients

  • 1 package corn or flour tortillas
  • 1 pound ground beef
  • 1 can RoTel diced tomatoes (10 oz)
  • 1 (8-ounce) package cream cheese
  • 1 ½ cups shredded Monterey Jack cheese
  • 2 black olives (sliced)
  • 6-8 corn tortillas (for chips)
  • Olive oil spray or brush
  • Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the corn tortillas into triangles and arrange them on a baking sheet.
  3. Spray or brush them lightly with olive oil and sprinkle with salt. Bake for about 10-12 minutes until crispy and golden.
  4. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  5. Add the drained RoTel tomatoes and softened cream cheese to the cooked beef. Stir continuously until the mixture is smooth.
  6. Stir in 1 cup of shredded Monterey Jack cheese until melted. Pour the dip mixture into a serving dish and sprinkle the remaining cheese on top.
  7. Place the dish in the oven and bake for an additional 10 minutes, or until bubbly and golden.
  8. Remove from the oven and garnish with sliced black olives. Serve warm with freshly baked tortilla chips.

Notes

Ground beef can be substituted with turkey or plant-based alternatives for a lighter or vegetarian dip.
