Ingredients
1 can of black beans, rinsed and drained
1 can of chickpeas, rinsed and drained
1 cup of corn (fresh or frozen)
1/2 cup of cherry tomatoes, halved
1/4 cup of red onion, finely chopped
1/4 cup of fresh cilantro, chopped
1 avocado, diced
Juice of 2 limes
1 tablespoon of olive oil
2 tablespoons of miso paste
1 garlic clove, minced
Splash of water to thin if needed
Salt and pepper to taste
Instructions
Prepare the Bean Base: In a large bowl, combine the black beans, chickpeas, corn, cherry tomatoes, red onion, and cilantro. Toss gently to mix.
Mix the Dressing: In a separate bowl, whisk together the lime juice, olive oil, miso paste, and minced garlic until smooth. Add a splash of water if the mixture is too thick.
Combine and Season: Pour the dressing over the bean mixture and gently toss to coat all the ingredients. Season with salt and pepper to taste.
Add Avocado: Just before serving, gently fold in the diced avocado, being careful not to mash it.
Notes
Tip: Add the avocado just before serving to prevent browning.
