A delightful dish blending flavorful salmon with aromatic pesto, served over al dente pasta, perfect for busy weeknights or casual dinners.

Ingredients

  • 2 large salmon filets
  • 1-2 teaspoons olive oil
  • 1 teaspoon lemon juice (from 1/2 lemon)
  • Kosher salt and black pepper, to taste
  • 8 ounces dried pasta (penne or farfalle)
  • 2/3 cup pesto (jarred or homemade)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Prepare the Baking Sheet: Line a baking sheet with parchment paper. Place the salmon filets skin-side down.
  2. Season the Salmon: Brush with olive oil and lemon juice. Sprinkle with salt and pepper.
  3. Bake the Salmon: Place in a cold oven, set to 400°F for 20 minutes. Check for doneness.
  4. Cook the Pasta: Boil water, add salt, and cook the pasta per package directions. Reserve pasta water, then drain.
  5. Combine Ingredients: In the pot, mix pasta with pesto, Parmesan, and reserved pasta water until desired consistency.
  6. Finish the Dish: Flake cooked salmon and mix into the pasta or serve on top.

Notes

Use fresh salmon for the best flavor. Homemade pesto enhances taste, but store-bought works well.
