A healthy twist on traditional Pad Thai using spaghetti squash instead of noodles, offering a delicious and nutritious meal.

Ingredients

  • 1 Medium Spaghetti Squash (need 5 cups cooked)
  • 2 Tablespoons Avocado or vegetable oil
  • 2 Garlic Cloves (minced)
  • 1 Cup Green Onions (diced)
  • 1 Red Bell Pepper (thinly sliced)
  • 4 Eggs (whisked)
  • 1 Pound Chicken Breast (sliced into strips)
  • 3 Tablespoons Fresh Lime Juice
  • 2 Tablespoons Fish Sauce
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Sriracha
  • 1 Tablespoon Brown Sugar
  • Fresh Cilantro (chopped, for garnish)
  • Roasted Peanuts (roughly chopped, for garnish)
  • Lime wedges and additional Green Onions (for serving)

Instructions

  1. Cook the Spaghetti Squash: Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half and place cut side down on a rimmed baking sheet. Bake for 30-40 minutes, until fork-tender. Allow it to cool, then scoop out the seeds and use a fork to shred the flesh into “noodles.” Aim for about 5 cups, saving any leftover squash for another recipe. Place the noodles on a paper towel-lined plate and cover with paper towels to absorb excess moisture.
  2. Prepare the Sauce: In a medium bowl, whisk together the lime juice, fish sauce, soy sauce, Sriracha, and brown sugar. Set aside.
  3. Cook the Chicken: Heat oil in a large pan over medium-high heat. Once shimmering, add the chicken strips. Cook until no longer pink, about 4-5 minutes on each side. Transfer the cooked chicken to a plate and set aside.
  4. Sauté Aromatics: If the pan is dry, add an additional tablespoon of oil and reduce the heat to medium. Add minced garlic, scallions, and sliced red bell pepper. Sauté for 2-3 minutes until the garlic is fragrant.
  5. Scramble the Eggs: Push the vegetable mixture to one side of the pan and pour in the whisked eggs. Scramble until just cooked, breaking them into small pieces.
  6. Combine Lastly: Add the sauce, cooked chicken, and spaghetti squash noodles to the pan. Stir well to combine and heat through, about 2-3 minutes.
  7. Serve: Scoop into bowls or on plates, topping with fresh cilantro, chopped peanuts, and a lime wedge. Enjoy!
