Ingredients
1 medium spaghetti squash
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/2 cup pepperoni slices
1/2 cup chopped bell peppers
1/2 cup chopped onions
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil
Instructions
Preheat your oven to 375°F (190°C).
Cut the spaghetti squash in half lengthwise. Scrape out the seeds and drizzle the insides with olive oil. Season with salt and pepper. Place the squash cut-side down on a baking sheet.
Bake in the preheated oven for 30-40 minutes, or until tender.
Sauté the chopped onions and bell peppers in a skillet over medium heat until softened, about 5-7 minutes.
Scrape the strands of cooked squash into a mixing bowl. Add marinara sauce, sautéed vegetables, pepperoni, Italian seasoning, and half of the mozzarella cheese. Mix well.
Transfer the mixture into a greased baking dish. Sprinkle the remaining mozzarella cheese on top.
Bake for an additional 20 minutes, or until the cheese is bubbly and golden.
Cool slightly before serving.
Notes
The spaghetti squash provides a slightly sweet and nutty flavor. For a dairy-free option, substitute mozzarella with vegan cheese.
