Ingredients
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk (any type)
1 large egg
2 tablespoons melted butter (plus extra for cooking)
Chocolate chips or mini chocolate chips for eyes
Whipped cream or icing for ghostly shapes
Instructions
Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, and salt. Whisk until well blended.
Combine wet ingredients: In another bowl, whisk together milk, egg, and melted butter until smooth.
Combine mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it’s okay if there are a few lumps—don’t overmix.
Heat the pan: Place a non-stick skillet or griddle over medium heat. Brush with a little melted butter once it’s hot.
Cook the pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon to shape the batter into ghost-like figures, making them wider at the top and tapered at the bottom. Cook until bubbles form on the surface, about 2-3 minutes.
Flip and finish: Carefully flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through. Repeat with remaining batter.
Decorate: Once the pancakes are on a plate, use chocolate chips to create eyes and whipped cream or icing for ghostly smiles.
Notes
Don’t overmix to maintain fluffiness, and ensure your skillet is properly heated for even cooking.
