A delightful dessert that perfectly balances rich chocolate and refreshing mint flavors. This vegan and gluten-free tart is easy to prepare and makes for an impressive treat.

Ingredients

  • 1 ½ cups almond flour
  • ¼ cup cocoa powder
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • ½ teaspoon vanilla extract
  • 1 cup full-fat coconut milk
  • ½ cup dark chocolate chips
  • 1 teaspoon peppermint extract
  • Fresh mint leaves for garnish

Instructions

  1. Prepare the Crust: In a mixing bowl, combine almond flour, cocoa powder, maple syrup, melted coconut oil, and vanilla extract. Mix until all ingredients are well combined. Press the mixture firmly into the bottom of a tart pan and refrigerate for 30 minutes to set.
  2. Melt the Chocolate: In a saucepan over low heat, combine full-fat coconut milk and dark chocolate chips. Stir continuously until the chocolate is melted and the mixture is smooth.
  3. Add Mint Flavor: Remove the saucepan from heat and stir in the peppermint extract. This step adds a refreshing minty kick to the chocolate filling.
  4. Combine and Chill: Pour the chocolate mixture into the prepared crust, smoothing the top with a spatula. Refrigerate the tart for at least 2 hours or until fully set.
  5. Garnish and Serve: Before serving, garnish the tart with fresh mint leaves on top for a touch of color and additional freshness.

Notes
