Ingredients
1 cup crushed cookies (graham crackers or Oreos)
8 oz cream cheese, at room temperature
1/2 cup sugar
1 tsp vanilla extract
1 cup heavy cream
1/2 cup raspberry puree (fresh or frozen)
1 tbsp gelatin (optional)
Red food coloring (optional)
Instructions
Prepare the cookie base: In a mixing bowl, combine the crushed cookies with melted butter. Mix until fully combined, then press the mixture firmly into the bottom of small molds or cups to form a solid base.
Mix the cheesecake filling: In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy with no lumps remaining.
Whip the cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold this whipped cream into the cream cheese mixture until just combined.
Assemble the cheesecake bites: Spoon the cheesecake mixture over the cookie base in the molds, smoothing the top with a spatula.
Chill until set: Place the molds in the refrigerator and allow the cheesecake bites to chill and set for at least four hours.
Prepare the raspberry topping: If using, mix the raspberry puree with gelatin in a small saucepan over low heat until the gelatin dissolves. Drizzle the raspberry mixture over each cheesecake bite.
Final chill: Return to the refrigerator and chill until ready to serve, ensuring the topping is set.
Notes
